This inaugural vintage of 57 Octaves Below Middle C is a unique combination of varietals made with differing fermentation styles. Tempranillo fermented hot and fast while the remaining fermented low and slow. The must was punched down multiple times a day to ensure nice extraction .Only free run wine was selected to be bottled.I used a mix of puncheons and 265liter barrels from my favorite blend of coopers.The wine was racked once before bottling in May 2022.
