This wine represents the beginning and ending of a growing season. Tempranillo kicked off harverst on my birthday September 11. Fermentation progressed quickly and led to a couple sleepless nights of cap management and punching down. Fast forward a month to October 20th the Cabernet Sauvignon was harvested. The Cabernet brought lovely consistency. Low fermentation temperatures allowed for extended time on skins and a long maceration period. Racked once before bottling, the finished wine was bottled in May 2022. -Scotty Saunders
